September 10th, the opening and ribbon-cutting ceremony for Xujiacai, a Michelin One-Star restaurant, took place at Jiazhi Old Street.

As a representative of new Sichuan cuisine, Xujiacai has garnered widespread acclaim from both domestic and international diners for its unique fusion cooking style and exquisite culinary techniques. Since its inception, the restaurant has adhered to the philosophy of “presenting classic Sichuan dishes with sophistication” and has been committed to the promotion of Sichuan culinary culture. The recognition of Michelin One-Star not only signifies its pursuit of the highest quality in dishes but also reflects a profound understanding of dining culture.

“The primary reasons for establishing our restaurant in Jiazhi Old Street are the unique historical and cultural ambiance of the area and our aspiration to share Xujiacai’s dedication to premium ingredients, continuous innovation in cooking techniques, and passion for food with every corner of the old street,” stated Xu Fan, the founder of Xujiacai.

Regarding the taste of the dishes, Xu Fan shared with reporters that in order to better integrate into the environment of Jiazhi Old Street, Xujiacai has retained its signature dishes while also introducing a series of innovative offerings. These include dishes such as Spicy and Fresh Squid and Braised East China Sea Yellow Croaker, which combine local Taizhou ingredients and flavors. These creations not only bring authentic Sichuan flavors to visitors but also incorporate the sweet and fresh elements of Taizhou cuisine, providing guests with a unique culinary experience that harmoniously blends the charm of the old street with the allure of cross-regional flavors.

In recent years, Jiazhi Old Street has been evolving its business model in alignment with the Youth Development City strategy, introducing new “trendy” cultures and lifestyles, and transforming the area into a prime destination for young people to unwind.
